Cauliflower hash browns

Adapted from Gina's cauliflower fritters recipe at skinnytaste.com

I've never been a fan of cauliflower, but I'm determined to try new vegetables so I can expand my palette, and introduce new taste experiences to my kids. I found this cauliflower fritters recipe on skinnytaste and decided to give it a whirl. Husband and babygirl liked it...success!

1 c cauliflower, steamed
1 Tbsp butter
1/4 c chopped onions
1 tsp parsley
1 clove garlic, minced
1/2 c flour
1 egg, beaten
1-2 Tbsp water, reserved from cauliflower steaming/cooking
salt and pepper
1 Tbsp oil

Steam cauliflower until soft (I cooked my frozen cauliflower in the microwave). While still warm, add butter, onions, parsley and garlic and mash together with potato masher. Combine the mixture with flour and egg and continue to mash. Add water if the consistency is too thick. Add salt and pepper to taste.

Heat oil in a large non-stick skillet. Over medium-high heat, spoon batter into skillet and flatten out. Cook about 5-6 minutes per side. Serves 6.
