Ate Lisa's espasol

4 1/3 cups sweet rice flour (save the 1/3 for dusting later on)
1 1/2 cup sugar
2 cups (2 cans) coconut milk
1/2 teaspoon salt

Toast the sweet rice flour in a pan and set aside (dont burn it... just light brownish, you can tell anyway, and we usually do it in two batches, easier to mix).

Boil the coconut milk, sugar and salt. then add the toasted sweet rice flour (slowly while mixing) and continue to cook until it thickens (make sure you lower down the heat) keep mixing it and mixing. we usually just turn off the stove and continue mixing, it's gonna be like a dough

when it's done, remove from heat and transfer on a board or any flat surface which has been dusted with the leftover sweet rice flour. flatten using rolling pin, about 1/4 inch and cut into diamonds or any shapes you like.
