2 cans coconut milk
2 cans water
2 medium size sweet potatoes
7 small bananas
1 can jackfruit
1 c bilo bilo
1/4 c uncooked tapioca pearls
1/3 c sugar
Make bilo bilo with glutinous rice flour and water. Set aside.
Pour coconut milk and water into a large pot and boil. Once boiling, turn down the heat and add sweet potatoes.
In separate pot, cook tapioca pearls. Drain and then put in an ice bath to stop cooking. Drain. Set aside.
Once sweet potatoes start to get soft, add bananas. After ~3 minutes, add jackfruit and bilo bilo. Once bilo bilo starts to float to the top, add tapioca pearls and sugar. Cook for another minute and then take off heat.
Serve warm or cold.
